1/1 This GSO standard shall apply to food enzymes as defined in (3/1). 1/2 This GSO standard shall not apply to food enzymes when and insofar as they are used in the production of : 1/2/1 Food additives falling within the scope of GSO standard on food additives. 1/2/2 Processing aids. 1/3 This standard shall not apply without prejudice to any specific rules concerning the use of food enzymes: 1/3/1 In specific foods. 1/3/2 For purposes other than those covered by this standard. 1/4 This standard shall not apply to microbial cultures that are traditionally used in the production of food and which may incidentally produce enzymes, but which are not specifically used to produce them.
